This delicious Chai Spiced Protein Banana Bread recipe was sent to us by the lovely Zoe at wildblend.co where you can also find a range of other delicious recipes.

Makes 1 loaf // Duration: 15 Minutes // Baking Time: 30-35 Minutes

Ingredients:

200g almond flour
4 extra ripe (brown spotted) organic bananas
3 x egg substitute
2 tbsp organic cold-pressed coconut oil
3 tbsp Chai Protein powder
1 tsp cinnamon
1 tbsp coconut sugar
1 tsp gluten-free baking powder or cream of tartar
1/2 cup Pecans (coarsly chopped)

Method:

Add all wet ingredients (bananas, egg substitute, coconut oil) to a high-speed blender and blend until creamy.
Add all dry ingredients (except the nuts) and blend until smooth and creamy.
Stir the pecans into your mixture and combine well.
Pour mix into a rectangular baking dish and decorate with sliced banana, nuts or berries.
Bake at 170°C for about 30-35 minutes (depending on your oven). Keep an eye on the heat, it turns dark quite quickly.
